GENTLY crack open the test (external skeleton) after rubbing the spines so that they are not so long and sharp as to preclude cleaning.

The roe is found in five crescent shaped egg sacs that are positioned around the inside edge of the test. The sacs should be yellowish to off-white in color. They really are very fragile, so there is a little bit of a learning curve to successfully extracting them. I am still looking for additional recipes but if they are not thoroughly rinsed, its just a big salty-tasting mess. Also, i have never tried the purples: only the reds. We probably should hassle Seahunt to post more recipes if he has any. He has one on his website now i believe.
