I've been using an Ikelite casing for about nine months, and the only time I've gotten any fogging has been once or so when a couple of drops of water got inside the casing before I sealed it up, and then subsequently evaporated.

As c2cdiver points out, one approach would be to seal it up before you leave home. If like me you need to change film (or in your case, memory cards or batteries) on a dive boat, just be as paranoid about water as possible -- dry the casing off _extremely_ carefully before opening it up.
