Not too long ago, at St. Miguel, I saw a male sheephead opening an urchin for his harem to feed on. Totally cool to watch him bite it open and then step back for his ladies.
I ate uni at a seafood place in Nice, France, many years ago. You'd pick whatever you want from their display of seafood and then you'd get it served at your table. They cut the urchins in halves and with a spoon, you scoop out the orange uni and eat it with a drop of lemon juice. Ahhhh, delicious! Tastes like rich butter.
