Leather used to be the best. They had great feel and good grip. Water doesn't hurt them, but they wear out quickly.
The next best were neoprene gloves with the finger tips dipped in Aquaseal and then dipped in sand. Durrable, warm and good grip.
Now you can get neoprene gloves with kevlar on the palm and fingers. They are great. Warm, durable and with a good grip. They are not expensive either.
There is a lot about lobster hunting at seahunt Diving and Mergatroidology
Enjoy the diving, seahunt

Notice the kevlar on the glove tips
