I think I understand what your group wants - BIG wow factor and not too tricky of a dive in moderate temps.

Jon hit it right on the head - Do Hawaii (the Big Island)
AND
Make sure you sign up for the night dive to see the mantas feeding. You stay stationary on the bottom at 30 feet deep so there isn't any excessive skill needed and these Manta Rays that are 6 feet across come swooping by at just inches over your head. Kona Coast divers did such a good job at organizing this dive and bringing the professional videographer along that I bought the DVD/Video for $40.00. In 15 years of prior dive trips I've never bought a DVD/Video of the trip, but I was so impressed with this close encounter that I had to have it.
