I've seen fish similar to that before, (with purple/lavendar pastel coloration), although not with so much nice coloration. I've always assumed they were Pleuronichthys coenosus (C-O Sole), any reason you ruled them out? C-O Sole can change color and patterns to blend with their surroundings.

It would have helped though if you had taken more photos. (lol)
