Phil,
The piddock photo is great, the eel also came out very nicely as well. You will do better as you get used to your new strobe.
When you shoot bracket the exposure (strobe) and move the strobe around. Take perhaps 20 to 30 pictures of one subject with varied strobe positions and brightnesses. This will help you zoom in on what works well in each situation.
