I believe for a liveaboard you're limitd to two choices - Solmar V and Don Jose. In the winter, Solmar V goes to Soccoros, which is an advanced itinerary. The boat is also more upscale than the Don Jose, and it's not the cheapest. I was on Solmar V last summer, and have heard good things about the Don Jose.
Don't know where the Don Jose goes in winter.
