Where are you going to be staying? There are lots of good dive boats, but they go out of various places (San Pedro, Long Beach, Ventura, San Diego). If you narrow that down, then we can give some recommendations.

Water is usually 55F at the surface, and vis depends on the weather. If its pretty warm, the plankton bloom can get pretty big and vis drops considerably.

Check this site out for daily conditions (this is beach, so Catalina or any of the off shore islands will have a better vis in general).
