I have 3mm and 5mm. There is less dexterity with the 5mm relative to the 3mm when my hands are warm. Numb hands in thinner gloves are pretty useless though, so the 5mm wins out for cold water diving. I've been comfortable in my 5mm in temps down to the low 40's at depth. I often do shallow dives of over an hour in a local cove with 50F water. My hands do not get cold at all in the 5mm gloves. Of course, my dry suit may also have something to do with that.
